Inspired by the rich romanticism of Manx folklore, particularly the Mermaid of Gob-ny-Ooyl - a fable of lost love, burgeoning obsessions, and lamentable wind-borne songs. The mermaid would bestow good luck and good fortune on fisherman in exchange for apples or ‘land eggs’.
Tropical fruit with crisp green apple, fresh cut grass, sharp citrus lime and buttery, smooth white chocolate finish.

Feeling inventive? Try a ‘Dirty Mermaid Mojito’. Muddle 1x kiwi, 6x blueberries, 8x mint leaves and 1x tsp of Demerara sugar. Add 50ml of Windsong White Rum and top up with soda. Serve over ice and garnish with a sprig of mint, blueberries and a slice of kiwi.
